Beef & Dumpling Soup
A rich, hearty beef soup loaded with tender vegetables and topped with soft, homemade dumpling noodles for the ultimate cozy comfort food.
Ingredients
For the Soup
- 1 lb beef stew meat or up to 2 lbs
- 2 Tb all-purpose flour
- 2 quarts beef stock homemade canned or stor-bought
- 3 Tb butter
- 1/4 c avocado oil or olive oil
- 1 onion diced
- 1/2 lb carrots diced
- 2 stalks celery diced
- 2 Tb beef "better than bouillon" base paste or up to 3 Tb according to taste
- 1 Tb Worcestershire sauce
- 1 Tb garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon granulated onion or onion powder
- 1/2 teaspoon granulated garlic or garlic powder
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- 1/2 teaspoon celery seed
- 1 Tb dry parsley or up to 2 Tb according to taste
For the Dumplings
- 3 c all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 c butter (4 Tb) frozen or very cold
- 1/12 c milk as needed, see instructions
Instructions
- LETS PUT IT TOGETHER!
For the Soup
- 2 Tb Butter with oil, heat in pot.
- Add the chopped onions, carrots and celery. Cook until tender.
- Remove veggies from the pot and set them aside in a dish.
- Add the butter with additional oil to the pot. Melt until hot.
- Add beef and sear/cook beef.
- Sprinkle the flour over the cooked beef. Cook flour 1-2 minutes.
- Pour in 1 quart of the beef broth.
- Add the veggies back to the pot, along with the Worcestershire sauce, bouillon paste, and seasonings.
- Add the additional broth if needed.
- Bring it to a boil.
- TASTE!!!! It is shocking how many people do not taste test their food. Taste it, and adjust your seasonings, adding more if need be, until you get it perfect. It is OK if it tastes strong…. The dumplings will weaken the flavor.
Prepare the Dumplings
- Add flour, salt and baking powder to a bowl. Whisk together to blend.
- Shred or cube the frozen/cold butter and work it into the flour.
- Add 1 cup of the milk and mix together. Add additional milk a tablespoon at a time as needed until the dough is moist and not dry.
- Place your dough out on a floured countertop and knead dough until combined.
- Roll out the dough.
- Using a pizza slicer or sharp knife, slice the dough to form dumplings.
- Add dumplings to the pot.
- Cover and cook for 15 minutes until dumplings are cooked.

*NOTE: PLEASE feel free to tweak the seasonings and the vegetables to YOUR liking! Have fun with it, and make this recipe your own! Start small. You can always add more!
