2 Tb Butter with oil, heat in pot.
Add the chopped onions, carrots and celery. Cook until tender.
Remove veggies from the pot and set them aside in a dish.
Add the butter with additional oil to the pot. Melt until hot.
Add beef and sear/cook beef.
Sprinkle the flour over the cooked beef. Cook flour 1-2 minutes.
Pour in 1 quart of the beef broth.
Add the veggies back to the pot, along with the Worcestershire sauce, bouillon paste, and seasonings.
Add the additional broth if needed.
Bring it to a boil.
TASTE!!!! It is shocking how many people do not taste test their food. Taste it, and adjust your seasonings, adding more if need be, until you get it perfect. It is OK if it tastes strong…. The dumplings will weaken the flavor.
